Here is something for you to try. It's easy and fool-proof. This sounds really weird, but I love it. It has a chinese food taste to it. It takes 8 minutes in the microwave.

It doesn't have a name, so let's call it california rice, because it is full of fruits and nuts. hehe (a little california humor)

California rice:

2 cups minute rice (reg. rice won't do)

1 and 3/4 Cups water

1 small can crushed pineapple (do not drain)

2 or 3 green onions chopped up

1/2 cup salted peanuts (cocktail peanuts or dry roasted)

Dump all the ingredients in a big microwave safe bowl, stir, add a little salt if you want to... (sometimes I put a teaspoon or so of sugar to help the pineapple seem sweeter) Cover with wax paper and cook on high for 8 minutes.

Be brave and try it sometime. It's low fat because there's no butter or anything. The only fat is in the peanuts. It tastes good and reheats great. I make a lot of it and then I have it for lunch the next day. It's kind of like rice pilaf with the tangy taste of pineapple in it.

We like to eat it for dinner with chicken tenders. Bock Bock.

I know.

I didn't have to do the bock bock part.
